Beef Roulade

Again a childhood memory from my grandmas secret recipe “Beef Roulade”.

A classic Goan recipe where beef is cut into thin slices...tenderise,marinated with green masala, stuffed with egg and some vegetables (whatever veggies you prefer), along with Goan sausages rolled it and tied it with a thread so that the stuffing remains intact...and cooked with onions and tomato gravy.



Ingredients

👉1 kg beef(slice it thin)preferably undercut

👉6 tbsp of green masala (view my post of green masala)

👉2 tbsp vinegar

👉2 large finely chopped onions

👉1 large finely chopped Tomato

👉2 Potatoes cut into strips

👉3 carrots cut into strips

👉200gms Goan pork sausages

👉4 eggs whisked

👉2 tbs oil 

👉salt to taste

👉A thread to tie the beef rolls

Method:


* Wash the undercut beef nice and clean (it should not have any blood water it should be dry)

* Flatten the beef pieces with a meat tenderiser, after that apply salt to it.

Apply 4 tbsp of green masala to meat, coat each piece with it. Add 2 tbsp vinegar, keep to marinate for an hour in a room temperature.

* In a shallow frying pan on a medium heat add 1 tbsp oil, add a little portion of whisked egg, very fine not too thick, fry it like a pancake..keep it aside


* Now its time for filling the roulade:

- Place the marinated steak on a board, to that add half egg(the pancake egg make it half) and place on top of the steak

- On top of the egg pan cake add stripes of potatoes and carrots lined up with pork sausages cut into cubes..



* Roll the steak nice and gently to form a roll tie it with the thread so that filing remains intact roll all the steaks and keep aside



👉In a pot heat up 1tbsp of oil on a medium heat add chopped onions chopped tomatoes sauté for a while utill mushy add 2 tbsp of green masala sauté it for 3 mins add 1 cup of water

👉Add the tied beef rolls to the boiling mixture cover it and cook it for 15 mins on a low heat..let the meat cook into its own juices...do not completely dry it keep a thick consistency...when done let it cool down place them on a board ...remove all the strings from the beef rolls cut into rings..place them into plate...

you can pour the gravy on top of it if you require..my delicious grandma secret recipe is ready to eat...

you can add any stuffing of your choice it can be chicken,becon,pork fat and any vegetables of your choice...
