Thai green curry

Comfort in a bowl 🥣Thai green curry with chicken,baby corn and flat beans.

Ingredients

👉2 tbsp green curry paste(store bought)

👉1 tbsp vegetable oil

👉200 gms chicken breast diced and seasoned with salt

👉400 ml coconut milk

👉1 medium chopped onion

👉2 slited green chillies

👉5 baby corn (halved lengthwise if large)

👉1 cup green flat beans (cut into bite-size)

👉1 tbsp fish sauce

👉4 cloves of finely chopped garlic

Instruction

1.Sauté the diced Chicken

Heat oil in a pot over medium heat, add the chopped garlic and finely chopped onions sauté it for a minute then on a high heat add the diced chicken sauté it at least 2 mins.

2.Add the green curry paste

Add the green curry paste and stir-fry for 1–2 minutes until fragrant.

3 Add Coconut Milk

Stir in half the coconut milk and let it simmer until it starts to thicken slightly (about 2–3 minutes).

4.Add Vegetables:

Add baby corn and flat beans.Pour in the rest of the coconut milk.Simmer for 10–12 minutes, until vegetables are tender but still vibrant.

5.Season

Add fish sauce ,Taste and adjust — last add the slited green chilies.

6.Serve:

Spoon over hot jasmine rice and enjoy.
