Caribbean Banana fritters

An absolute good way to use overripe bananas or if there are lots of bananas and you want to do something delicious and flavourful.The riper the bananas the sweeter the fritters will be.This recipe is very popular served at breakfast in Africa.There are many versions of these fritters.some use wheat flour some don't use egg/milk.I made it with a combination of egg and milk and when I first made it, the fragrance of the fritters was all over my house and when done, it was over within few minutes on the table.

In my house these fritters are loved by all so do try this easy and simple recipe.


Ingredients:

>2 bananas

>2 eggs

>1 cup plain flour

>3 tbsp milk

>2 tbsp melted butter

>1tsp baking powder

>1/2 tsp cinnamon

>1/2 tsp nutmeg powder

>3 tbsp powdered sugar

>1/2 tsp of salt

>1 tsp icing sugar to sprinkle




Method:

1.Take a bowl mash the bananas with a fork or a spoon until mushy to that add melted butter mix it well together.

2.Add in two eggs mix it all up until the egg and the banana mixture combines very well

In a separate bowl strain the plain flour add in sugar,nutmeg,baking powder,cinnamon and salt mix the dry ingredients together.



3.Combine the mixed dry ingredients to the wet ingredients and mix it all up to form a batter now add in the milk form it a thick consistency thicker than pancake batter.let it rest for ten minutes.



4.Heat up a deep frying pan add in 1/2 litre of oil when the oil heats up on a medium heat scoop up a small batter in the spoon and deep fry it in batches maybe 4 at a time fry it until golden brown turning both the sides.if you put more fritters at a time than the oil will get cold and the fritters will absorb more oil.


5.Drain the excess oil with the slotted spoon,when done remove it on a paper towel and sprinkle some icing sugar on it.

The banana fritters are ready it tastes delicious when served warm.

Have it with a nice cup of cinnamon tea.
