Chicken Patiala

A Dish of Punjab which is has a nutty and creamy flavour

Chicken patiala(with my home grown fenugreek leaves)

It's a blend of flavourful spices and a combination of yogurt, cream, and ground cashew nuts.

The flavour and the texture of this dish is what really matters.





Ingredients

750 gms chicken( washed,cut into pieces) 2 large finely chopped oinion 2 medium finely chopped tomato 2 whole green cardamon 2 cloves 1/2 “cinnamon 1 tbsp ginger garlic paste 1/2 tsp turmeric powder 1 tbsp coriander powder 1 tsp red chilly powder 1/2 cup fresh fenugreek leaves 1 cup fresh Cream 1 cup cashew nut paste 1 medium diced onion 1 medium diced capsicum 2 tbsp oil

Marination of chicken 1/2 cup yogurt 1 tbsp ginger garlic paste 1 tsp cumin powder 1 powder 1/2 tsp chilly powder 1/2 tsp turmeric powder


Method


*In a bowl add in yogurt,ginger garlic paste,turmeric powder,red chilli powder,black pepper powder and 1/2 tsp salt mix this all together to the chicken....marinate for 1/2 hour...keep aside


*In a heavy bottom pan pour 2 tbsp oil to that cinnamon,cloves,cardamon let it splatter add in ginger garlic paste Sauté it for 20secs add in chopped onions sauté till golden brown



*Add in turmeric powder,chilly powder 1 tbsp coriander powder sauté for 10secs

*Add in 2 medium chopped tomatoes sauté it nice and soft add a little water so that it’s nice and mushy


*In a small bowl Remove half of the masala from the pan (we need this to finish off our gravy)keep it aside...

*To the rest of the masala in the pan add in the marinated chicken mix it altogether...cover it n cook it on low flame till the chicken is done.

*In a separate pot add in 1tbsp oil add in 1 tsp cumin seeds add in 1/2 tsp chopped ginger and 1/2 tsp chopped garlic Add in 1 cup fresh methi...sauté add in 1 diced onion and 1 diced capsicum sauté for a while

*Add in the half paste which was removed sauté for a while

*Add in the 1 cup cashew nut paste to it stir it low flame for 2 to 3 mins add in 1/2 cup water add in 1/2 tsp salt cook it for 2 to 3 mins

*Add the above gravy to the cooked chicken mix in gently

*Add in 1/2 tsp Garam masala 1 chopped green chilly 1/2 tsp ginger cut into julienne 1 tsp kasuri methi last add fresh cream..cook it for 2 more mins...

*Your nutty creamy chicken patiala is ready to eat

*Can have it with steamed rice,Parathas, naans
