A Kashmiri chicken curry which is the most delicious fragrant curry packed with flavours.
Ingredients
1 kg chicken on bones
2 large sliced onions
4 medium chopped tomatoes
2 slit green chillies
10 dry red chillies 🌶 (soaked in water for 10mins)
10 green cardamona
1 1/2 tsp cumin seeds
1 1/2 tsp Garam masala
1/2 tsp turmeric powder
4 tbsp yogurt(whisked)
2 tbsp butter
2 tbsp ghee
Method
*In a big bowl Season the washed chicken with salt keep it aside.
*In a blender add in chopped tomatoes add in dry red chillies and green cardamons make a fine paste keep it aside.
*Heat up a pot on a medium heat add in ghee add in cumin seeds let it splatter add in oinion sauté until golden brown... add in slit green chillies fry for few seconds
*Add the seasoned chicken...fry it for 3 to 4 mins on a high heat
*Turn the heat low add in the blended tomato chilli paste add in some salt mix it up all well...cover it let it cook for 10 mins on a low heat
*Add in Garam masala,turmeric powder mix it up altogether.
*Add in yogurt( whisked) stir it for a while and cover it let it cook for more 2 mins...add in some water for gravy say 1 cup stir it all up and cover it let it cook for 5 mins garnish it finely chopped coriander leaves.
*Serve hot with roti or steamed rice
