Chicken Yakhni pulao

Yakhni pulao is a kashmiri recipe made with rice,chicken and some spices that add flavour to the pulao. yakhni is stock of meat with few aromatic spices the soupy texture what we get after the meat cooks is called the yakhni. Then the stock,long grain rice and the meat is cooked together along with some seasoning.

it's an awesome recipe, do try it.


Ingredients:

๐Ÿ‘‰750 gms chicken( washed cut into medium pieces)

๐Ÿ‘‰1 large onion finely chopped

๐Ÿ‘‰1 tbsp oil

๐Ÿ‘‰1 tbsp ghee

๐Ÿ‘‰6 tbsp yogurt

๐Ÿ‘‰2 tbsp biryani masala

๐Ÿ‘‰1 tsp garam masalsa

๐Ÿ‘‰1 tsp salt

๐Ÿ‘‰1 tsp cumin seeds

๐Ÿ‘‰3 cups basmati rice(soaked for 15mins)

๐Ÿ‘‰6 cups water


Ingredients For the yakhni:

๐Ÿ‘‰2 tbsp Coriander seeds

๐Ÿ‘‰1 tsp cumin seeds

๐Ÿ‘‰1 tsp fennel seeds

๐Ÿ‘‰1 tsp red chilly powder

๐Ÿ‘‰15 peppercorns

๐Ÿ‘‰10 cloves

๐Ÿ‘‰6 cardamom

๐Ÿ‘‰1 tbsp salt

๐Ÿ‘‰1'' 3 sticks of cinnamon

๐Ÿ‘‰1 medium onion chopped

๐Ÿ‘‰1 large tomato chopped

๐Ÿ‘‰1 green chilly chopped

๐Ÿ‘‰1 pod of garlic( peeled cut into halves)

๐Ÿ‘‰1'' Ginger chopped


Method:

๐Ÿ‘‰Heat up a pot on medium flame add in chicken and all the above ingredients which says ingredients for yakni, then add in 6 cups of water let it boil for 5 mins.put of the flame and let it cool.


๐Ÿ‘‰When done let it cool, then remove the chicken pieces and strain the water( the strained water is called the yakni )keep the yakni aside.Throw away the strained boiled masala.we only need the yakni and the chicken.


๐Ÿ‘‰Now take a pot and heat up 1tbsp oil and 1tbsp ghee now add 1chopped onion sautรฉ till golden brown now add the strained chicken pieces,toss it gently then add 6 tbsp of yogurt then add in 2 tbsp of biryani masala ,1tsp of Garammasala,1tsp salt,1tsp cumin seeds.


๐Ÿ‘‰Sautรฉ gently now add the yakni give it a boil ,add the 3 cups of soaked basmati rice cover it let it cook for 10 mins..after that take a flat pan as we need to give dum for our pulao keep the pot on the flat pan let it cook in its flavours for 10mins...when done, you can serve it hot with any raita of your choice.
