I remember my neighbours making this version of poha chivda during Diwali so thought of making chivda myself although dint make it that spicy.
This chivda is very simple, quick and easy.Its done within 15 to 20 mins.I have used the normal poha whatever I had at home and the mixed nuts which I had at home.you can try this version with cornflakes aswell instead of poha.
Ingredients:
>2 cup poha/pressed rice
>1 cup mix dry nuts
>1 tsp turmeric powder
>1 tbsp roasted fennel seeds
>1 tbsp curry leaves
>1 tbsp red chilli powder
>2 tbsp sugar
>1 tsp salt
Method:
1.In a bowl mix in turmeric powder, roasted fennel seeds, red chilli powder, sugar, salt mix this all up together and set aside.
2.Take a deep frying pan or a heavy bottomed pan on a medium heat pour in 1/2 litre of oil let it get hot.
3.Take a deep metal strainer and put the poha in the strainer when the oil is hot put the strainer in the khadai or the frying pan so that the poha gets fried do not fry the whole poha altogether as it won't be crispy and wont be fried properly so fry it in batches of three.when fried the poha soon will change colour and will turn crispy, drain the strainer and remove it on a paper towel in a bowl now add a teaspoon of spice masala to it which we kept aside.
4.Now in the same strainer pour in the mixed nuts and put the strainer in the hot oil I have used the strainer so that I don't have to hunt for the nuts in oil,with strainer it is better it gets fried within one go,now drain it and put it in the poha mixture add a teaspoon of masala spice to it.
5. In the same strainer add curry leaves and fry it drain it and put it in the fried poha mixture
Mix it all up together don't stir it just toss it up altogether.
6.The poha chivda is ready it can be served as a snack or as a part of Diwali celebration.
After it cools down store it in an air tight container.
