Goan Coconut Pancakes

Alle belle is a traditional goan pancake which is delicious, soft, melt in your mouth sweet, coconut filling pancake,Traditionally the filling is done with palm jaggery mixed with fresh coconut, Here in this recipe I have shown two fillings, the traditional method and sugar and coconut filling.This delicious alle belle brings in lot of childhood memories each time I prepare it.

In Goa we usually don't wait to eat pancake on a pancake Tuesday or shrove Tuesday,its mostly done in the Goan houses for evening tea time.



For the batter of the crepe:

👉2 cups all purpose flour

👉2 eggs

👉1/2 tsp salt

👉800 ml of water

👉few drops of oil/ghee/butter for each time frying the pan cake


The traditional method pancake filling:

palm jaggery filling:

👉1 cup grated coconut

👉100 gms palm jaggery

👉1/4 tsp cardamon powder

👉2 tbsp water


For sugar/pink filling:

👉1cup grated coconut

👉3 tbsp sugar

👉1/4 tsp cardamon powder

👉1tsp water


👉In a bowl take 1 cup grated coconut, mix in crushed palm jaggery, cardamon powder mix altogether add a spoon of water and heat it up on low flame for for a minute when the jaggery has absorbed the coconut turn off the gas and keep aside...



👉In a separate bowl add 1 cup grated coconut add in few drops of pink colour, cardamon powder and 3 tbsp sugar mix it up well, add a tbsp of water, heat it up on a low flame 30 seconds.keep it aside.


👉In a bowl pour flour, salt,water and eggs, whisk it altogether well until all lumps are broken to form a smooth batter, it should a pourable consistency.Heat up a frying pan add in few drops of ghee on a medium heat take half of the ladle of the batter, pour it gently on a pan, spread the batter on the pan to form a round fine crepe.



👉Let it cook for 2 min..without flipping it,Transfer it from the pan to the plate ,repeat the process for the rest of the crepes.

👉Take another plate and place one crepe on the plate scoop up some palm jaggery filling on the crepe.roll it once and than close it up on the sides so that the filling doesn't come out,

then roll it up gently repeat the process for the rest of the palm jaggery pan cakes.



👉Next fill the plain crepe with sugar pink filling and roll it the same way folding both the sides.your delicious pancakes are ready to eat.
