Goan fried sardines

Goan fried sardines, locally known as Tarle Fry, are a coastal delicacy from Goa, full of bold, spicy flavors. Here’s a simple and authentic recipe you can try:

Ingredients:
8-10 fresh sardines (cleaned and gutted)
1 tbsp ginger-garlic paste
1 tsp turmeric powder
1.5 tsp red chili powder (Kashmiri for color, or spicy if you prefer heat)
2 tbsp tamarind pulp
Salt to taste
1 tbsp rice flour
1 tbsp semolina
Oil for shallow frying
Instructions:
👉Clean the sardines well. You can keep the head or remove it depending on your preference.
👉Pat them dry completely with paper towels.
Make the Marinade:
In a bowl, mix ginger-garlic paste, turmeric, chili powder, tamarind pulp and salt.
Rub generous amount of marinade all over the sardines.
Let it marinate for at least 30 minutes (or longer in the fridge for deeper flavor).
Mix the rice flour and semolina mixture together Lightly dust the marinated sardines in the mixture.
Heat oil in a pan over medium heat. Gently place the sardines in the hot oil and fry until golden and crispy on both sides, about 3–4 minutes per side. Serve hot
