Crispy, golden, and bursting with flavor — mix veg pakoras are the ultimate comfort snack for any occasion. Made with a variety of fresh vegetables coated in a spiced gram flour batter, these fritters are deep-fried to perfection. Serve them hot with mint chutney or tamarind sauce, and you’ve got a delicious treat that pairs beautifully with a cup of chai on a rainy day!

Ingredients:
• 1 onion (sliced)
• 1 carrot (sliced or grated)
• 1 potato (thinly sliced)
• ½ cup chopped coriander leaves
• 1 tsp cumin powder
• 1 tsp coriander powder
• 1 tsp red chilli powder
• ½ tsp turmeric powder
• 1 tsp ginger-garlic paste
• Salt to taste
• 1 cup gram flour (besan)
• 1–2 tbsp hot oil (for crispiness)
• Water as needed
• Oil for deep frying
Method:
1. In a mixing bowl, combine all sliced vegetables and chopped coriander leaves.
2. Add cumin powder, coriander powder, red chilli powder, turmeric, ginger-garlic paste, and salt.
3. Add gram flour and a little water to coat the veggies — batter should be thick.
4. Pour in 1 or 2tbsp hot oil in the batter and mix well (this makes pakoras crispier).
5. Heat oil in a deep frying pan and drop small portions of the mixture.
6. Fry until golden and crispy.
7. Serve hot with mint chutney or ketchup.
