Prawns pulao

Goan Prawn Pulao is a delicious, mildly spiced rice dish infused with the coastal flavors of Goa. It’s distinct from biryani—lighter, with fewer spices, and often cooked with coconut milk, aromatic whole spices, and fresh prawns.

Ingredients:
1 cup basmati rice (washed and soaked for 20 minutes)
250g prawns (cleaned and deveined)
1 medium onion (sliced)
1 tomato (chopped)
1 green chili (slit)
1 tsp ginger-garlic paste
½ tsp turmeric powder
½ tsp garam masala
1 cinnamon stick
2-3 cloves
2 green cardamoms
1 bay leaf
1½ cups coconut milk (or water)
Salt to taste
Fresh coriander for garnish
2 tbsp oil
Instructions:
Heat oil in a pot.Add whole spices (bay leaf, cinnamon, cloves, cardamoms).
👉Add onions and sauté till golden. Add green chili and ginger-garlic paste. Fry till raw smell goes.
Cook Tomatoes & Spices:
👉Add chopped tomatoes, turmeric, and salt. Cook until soft.Add prawns and cook for 2-3 minutes (don’t overcook).
Add Rice & Coconut Milk:
👉Add soaked rice and stir gently.Pour in coconut milk (or water). Add garam masala Adjust the salt.
Cook the Pulao:
👉Cover and cook on low heat for 15 minutes or until rice is done and liquid is absorbed.Let it rest for 5 minutes.
Garnish:
👉Fluff with a fork. Garnish with chopped coriander leaves
