Tomat bhaji a very simple and easy to make dish which is ready in minutes and very delicious to taste. In this recipe the main star are the tomatoes.This dish takes me back to my home Goa where my maid used to make this tomato bhaji for us for breakfast when there were lots of tomatoes instore. In this recipe the tomatoes are cooked in the gravy of ground coconut and spices.This dish was mostly enjoyed by everyone in my house.A pleasing start to a wonderful day with this simple breakfast dish.

Ingredients:
👉3 medium onions sliced
👉4 medium tomatoes sliced
👉1/4 tsp turmeric powder
👉1 tbsp Garam masala
👉1 tsp red chilli powder
👉1”ginger
👉3 cloves of garlic
👉1 tsp mustard seeds
👉20 curry leaves
👉2 slited chillies
👉1/4 tsp asofedita
👉2 tbsp finely chopped fresh coriander leaves
👉1/2 cup coconut desicated/fresh coconut
👉2 tbsp oil
Method:
👉Heat up a frying pan on a medium heat add in 1tsp oil then add in ginger, garlic,1 sliced onions and 10 curry leaves fry it for 2 mins then add in the coconut ,mix it all up then add red chilli powder and Garam masala fry this all up until it gives a nice aroma turn off the gas and remove it in the plate and let it cool down.
👉Take a blender add in all the fried masala with 1/2 cup of water blend it to a fine paste.when done remove it and keep it aside.
👉Take a chopping board and slice the 2 onions and 4 tomatoes keep it aside.
👉Heat up a pot on a medium flame add in 2 tbsp oil when hot add in asofetida,mustard seeds and the remaining 10 curry leaves let it splatter.
👉Now add in sliced onions fry it until translucent then add in turmeric powder and the ground masala,fry the masala for a while then add in the salt, add in 1cup of water ,give it a boil then last add in the sliced tomatoes let the tomatoes absorb the gravy just let it simmer for 3 to 4 mins last before putting off the gas add in slited green chillies and finely chopped fresh coriander leaves.
This tomato bhaji is mostly enjoyed with pao/chapatis.
