Goan White Pumpkin Caldine with Prawns is a mildly spiced, coconut-based curry that balances sweet, tangy, and savory flavors. “Caldine” or “caldin” is a classic Goan dish often made with fish, prawns, or vegetables, cooked in mildly spiced coconut milk gravy.

Ingredients:

For the Caldine masala paste

👉3 green chilly

👉1 tsp cumin seeds

👉1 tbsp coriander seeds

👉1/2 tsp turmeric powder

👉5 to 6 black peppercorns

👉3 garlic cloves

👉1 tbsp of coriander leaves


Other Ingredients:

👉250g medium prawns (cleaned and deveined)

👉1 tin of coconut milk

👉2 cups white pumpkin (peeled and cubed)

👉1 medium chopped onion

👉1 medium chopped tomato

👉2 green chillies

👉1 tbsp oil

👉Salt to taste

👉Water as needed

Method:

  1. Grind all the masala paste ingredients with a little water into a smooth paste.

  2. Prepare the Curry:

    • In a deep pan, heat oil.

    • Sauté the onion until soft, then add the tomatoes sauté for a while

    • Add the prawns and slit green chili.

    • Sauté the prawns 🍤 until cooked than Add the ground caldine masala and sauté for 2–3 minutes till fragrant.

    • Add the tin coconut milk and a little water to adjust the consistency

    • Let it simmer gently for 5 minutes.

      Add the chopped pumpkin cubes and simmer for 2 more minutes or until cooked.

      check for salt and it’s ready to serve
