Dill leaves(shepu bhaji)

A flavorful and nutritious Shepu Bhaji (Dill Leaves Sabzi) made with a mix of dals and potatoes — earthy, aromatic, and packed with protein.


Ingredients:

  • Shepu (dill leaves) – 1 bunch, finely chopped (tender stems included)

  • Mixed dal – ½ cup (store bought)

  • 1 medium chopped onion

  • Potato – 1 medium, peeled and diced


Tempering

  • Oil – 2 tbsp

  • Mustard seeds – ½ tsp

  • Cumin seeds – ½ tsp

  • Hing (asafoetida) – a pinch

  • Turmeric powder – ¼ tsp

  • Green chilies – 2, chopped (or as per taste)


Cook the Bhaji

  • Heat oil in a pot,Add mustard seed, hing and cumin seeds let them splutter.

  • Add the chopped onion sauté it for a while

  • Add the washed mix dal and the diced potatoes,turmeric. Cook for 4–5 minutes on medium heat until the dal and potatoes are slightly cooked.

  • Add the chopped shepu and a little salt (dill shrinks and releases water).

  • Cook uncovered for 5–6 minutes until dill softens.

  • Add the slited green chillies

  • Adjust consistency — it should be semi-dry, not watery.

Finish & Serve

  • Taste for salt and adjust.

  • Optional: Sprinkle grated coconut and lemon juice before serving.

  • Serve with jowar or bajra bhakri, chapati, or plain rice with a drizzle of ghee.
