Goan potato bhaji/Sukhi bhaji/Restaurant style bhaji with beetroot chapatis

A great breakfast food Goan potato bhaji is very popular dish mostly served for breakfast or as a brunch mostly enjoyed with pooris but today I made it with beetroot chapatis the potato bhaji is called sukhi bhaji /botatechi bhaji in Goa,it is very popular in goan restaurants or tea stalls which is prepared with basic ingredients, can be had with pao/chapati and it is all time favourite in my house.A truly goan delicacy.


Ingredients:

👉1/2 kg potatoes

👉1 large onion

👉1 tsp cumin seeds

👉1 1/2 tbsp ginger garlic paste

👉1 tsp mustard seeds

👉10 curry leaves

👉4 to 5 green chillies

👉1/2 tsp turmeric powder

👉1/2 cup chopped coriander leaves

👉3 tbsp oil

👉salt to taste


Method:

👉Pressure Cook the potatoes for 5 mins or 3 whistles when cool remove it from the cooker,peel it and cut it into cubes when done keep it aside.

👉Heat up a pot on a medium flame add in 3 tbsp oil when hot add in mustard seeds, cumin seeds,curry leaves and slited green chillies let it splatter.now add in chopped oinions sauté until transluent now add in turmeric powder and ginger garlic paste fry it until the raw smell of ginger and garlic goes now add in little salt give it a stir.


👉Now add in chopped potatoes combine everything together add a cup of hot water and salt to taste cover it and lower the heat and let it cook for 5 mins and let it thicken up a bit, last add in the freshly chopped coriander leaves.


👉Your delicious potato bhaji is done enjoy


Beet root chapaties:

Ingredients:

👉3 beeroots

👉3 cups wheat flour

👉Water to kneed the flour


Method:

👉Boil the beetroots until soft when cool peel it off chop the boiled beetroot into fine pieces and grind them with Llittle water when done strain it with the strainer keep it aside.


👉Take a bowl pour in wheat flour add salt to taste and the beetroot juice to the flour kneed the flour into a dough. take a lime size ball and roll it on the rolling board with the rolling pin into circles when done fry it on a pan on a medium heat turning both the sides apply some ghee or oil if you like and the beautiful looking chapatis are done ready to eat with the potato bhaji.
